As you prepare your Thanksgiving Day meal this week, try to imagine doing so without tap water flowing from that kitchen faucet. It’s a pretty illuminating exercise, because you can’t get too far. We need tap water to rinse off the turkey and protect us from germs. You have to wash the vegetables. There’s water required for virtually every side dish, from the cranberries to the pumpkin pie. Each place-setting will need a tall glass of ice water. Of course, tap water also is needed to clean out the wine glasses and wipe down the counters. And, well, there is the matter of the toilets, which will be employed by approximately 30 million Americans at halftime of the second game.
